Gluten-free for 1 month

I went gluten free for 31 days, and here’s what happened.

I need to give a little backstory first. Last fall I found out that I have 2 vitamin deficiencies (B12 and D). I thought this was strange because I eat vitamin rich foods everyday. My doctor put me on some supplements for 3 months, then I went back to have my levels checked again.

My B12 moved up but it was still barely within normal range. My vitamin D only moved up one point, so I had to continue the regimen.

So what does this have to do with gluten? Well, I started googling things that cause vitamin deficiencies, and I came across an article on Celiac Disease. Basically, gluten damages the intestine villi which causes malabsorption of vitamins.

The more I read about Celiac, the more I realized how many symptoms I had of the disease. Specially, I experience brain fog, headaches after eating, stomach trouble (I don’t want to give TMI), Dermatitis Herpetiformis (small red bumps all over my arms), and waking up with swollen eyes/face. I would also bloat so badly after eating that I would look pregnant. My blood panel even had multiple abnormalities consistent with an autoimmune disease which Celiac is.

So I decided to partake in an experiment. I went gluten-free for the entire month of January. My life dramatically changed.

My brain fog cleared. My stomach issues regulated. I stopped waking up with a swollen face. I stopped feeling so sick after eating. My energy increased. My stomach wasn’t blowed up like a balloon all the time anymore. The Dermatitis Herpetiformis went away almost completely.

Oh and I lost TWELVE POUNDS!

To test my hypothesis that my body doesn’t like gluten, I decided to eat a gluten rich meal on February 1st to see what would happen. The next morning I woke up with my face so swollen that my eyes only opened halfway. You could literally see the fluid pooling above my eyebrows. My under eye bags were killer as well.

Now, I’m not saying that I have Celiac Disease. I’m not a doctor by any means. But I do know that my body is sensitive to gluten at the least, and I feel 100% better when I don’t eat gluten.

So I’m going to keep not eating gluten and tracking my progress. More updates to come.
